Cooking

You know what one of my favorite things to do is? Peeling beets. The thing about beets is that you have to cook them before you cut them or they will bleed into the water. So you cook them with the stems and root on and then when they are still warm you pull on your water proof apron and gloves and cut off the stem and root and then sort of peel the skin off. It just feels cool. After you are done with that (and the beet has bled all over the sink) you cut them up into chunks.

I love making pickled beets. Almost as much as I love eating them. What is not to love about a vegetable that bleeds?

Oooh, I love beets! Peeling them is a lot of fun, you're right. Have you ever had roasted beets? You have to peel them before roasting, so it's a little messy but they are just little earthy pieces of candy after roasting - so worth it.

I haven't ever roasted them. You just peel them and then put them in a pan and roast them? That would be so good.

I love that they are so messy. It is a whole process.

Nah, I don't love Terry Schiavo.

Beets, however, are my favorite vegetable.

Yeah, to roast them you peel them, cut 'em into chunks, toss with oil and salt & pepper, then roast at 350° or so until tender. They're also great dressed with balsamic vinegar at the end of cooking.

And messing around with beets is a hell of a lot easier than trying to get a mouse inside a turnip.

I've never tried cooking beets like that, but will have to try it.

I always peel them and cut them up before cooking them. This sounds much easier!

I think cucumbers are still my favorite but beets are pretty high on the list.

I have never even tried to peel and cut them first. This is the way my mom always cooked them. BTW, I boil them usually, it is pretty awesome.
