Nachos

I am really craving nachos. The really cheap ones I used to get on Fridays in juinor high with the liquid cheese.

I wonder if I could find them for lunch.

Probably any any decent SuperAmerica. The few I've been to in recent memory have had the liquid cheese dispenser.

Also, disturbingly, a chili dispenser for the hot dogs. I must be getting old, because that weirds me out a little. Out of a can, sure, okay... but chili out of a mechanically squirting nozzle?

Oh that sounds good. And I was already a planning on hitting up SA for gatorade at lunch. Dangnit I had promised myself I was going to eat salad for lunch today. But now I want nachos too!

And also you can still get nachos like that at movie theaters and Taco Bell. (at the bell order regular nachos, not the Bell Grande)

Here's my favorite nacho recipe. I actually made this for dinner last night.

Heat oven to 350 degrees.

Line corn tortilla chips on the bottom of a 9X9 brownie pan.

In a skillet, heat a little oil.

Finely chop half an onion, hot peppers, whatever other veggies you want.

Saute onions and peppers in the skillet for a few minutes until a little wilted.

Toss onions and peppers back onto chips. Mix them around a little.

Take some kidney beans and coat them heavily with taco seasoning. Throw them in.

Layer salsa on the chips, followed by some cheddar cheese.

Bake the whole mess in the oven until cheese is good and melted; while nachos cook, slice some lettuce for topping and half an avocado.

When everything's melty, top with lettuce and avocado slices. Eat out of pan. :-)

OMG I was just thinking this 30 seconds before I read your post!

I used to soak the nachos in the cheese until they got soft. So good!
